Besan pare recipe

minutesBesan pare is a spicy deep fried snack in which besan (chickpea flour) and rice flour are mixed with few Indian spices to form a dough, then rolled out and fried to a little golden and crispy strips.
Ingredients
1 cup of besan/chickpea flour
1/3 cup of rice flour
1/2 tsp of roasted clove powder
3/4 tsp of red chilly powder or to taste
1/2 tsp of turmeric powder
1/2 tsp of black pepper powder
pinch of baking soda
1 Tbsp of oil
2 tsp of lemon juice
Salt to taste
Oil for frying
Directions
- In a big bowl, mix everything except rice flour and besan.
- Then slowly add besan and rice flour and mix well so that flour is nicely coated with the spice mixture. Add enough water to make a soft and pliable dough.
- Let the dough rest for 15 minutes. Until then heat oil in a deep pan for frying.
- Divide the dough into two balls then roll out the dough with a rolling pin in a thin round or rectangular shape.(Thickness should be like roti)
- Cut the rolled out dough into thin strips.(about 3 inch length and 1/2 inch wide) 6. When the oil is ready(350 F), drop the dough strips in the oil carefully(do not over crowd it) and fry till it is golden brown . 7. It will get crisp when it gets cool down.
- When it gets cool down, store in a airtight container and put it in a pantry. It will good for a month or two. Do not refrigerate.
- Serve it as a snack with tea or coffee. Best alternative for chips. Perfect as a travelling snack.
- Lower down the red chilly powder measurement, if you dont want it spicy.
