Carrot and Cheese Sandwich

Who doesn’t love grilled cheese sandwich! And if some veggies are hiding in it, then it is even better. Simple, quick and healthy sandwich with a goodness of carrot and ricotta or cottage cheese with a hint of desi spices. Carrot and cheese sandwich is a great way for making a quick breakfast with a decent source of proteins, vitamins, minerals and fiber. This sandwich is super flavorful, thanks to cilantro, onion and cumin. It will keep you full for a longer time. Make this sandwich with a low-fat or full-fat ricotta cheese or cottage cheese, either way this carrot and cheese sandwich is delicious and satisfying.

Sandwich filled with goodness of carrot and ricotta and flavored with chilly, cumin and cilantro.

Ingredients

  • 1/2 cup of ricotta or cottage cheese (you can use low fat)

  • 1 medium grated carrot

  • 1/4 of medium onion, finely chopped

  • 1 Tbsp of cilantro / parsley

  • 1 small green chilly, finely chopped

  • 1/2 tsp of cumin powder

  • 1/4 tsp of chaat masala or 1/2 tsp lemon juice

  • Salt and pepper to taste

  • 4 whole grain bread or any bread you like

  • oil or butter for grilling

Directions

  • Mix well all the ingredients listed above except bread. Give it a taste test, add more salt or chaat masala if you like.
  • Spread this mixture generously between two slices of bread and grill it with a little butter or oil on a grill pan or in a sandwich maker. Do the same with remaining bread and stuffing.
  • Carrot and cheese sandwich is done.

Notes

  • You can serve carrot and cheese sandwich as a starters also, just use white bread and take the crust off the sandwich and divide the sandwich in halves or quarters.
  • Serve carrot and cheese sandwich warm else the sandwich will get soft after a while.
  •   Do not add chilly, if you are making this sandwich for kids.
  • Health check :- Carrots are known for its rich content of vitamin A and carotene. But they are also great source of several other vitamins and minerals like vitamin C, Vitamin B-6, thiamine, calcium, manganese, potassium, copper, phosphorus and fiber. Carrots are very low in calorie and has no fat and cholesterol. 1 medium carrot (61 gm) contains about 25 calorie. They are considered good for maintaining healthy eyes, teeth and gums.
