Simple, quick and healthy sandwich with a goodness of carrot and ricotta or cottage cheese with a hint of desi spices. Carrot and cheese sandwich is a great way for making a quick breakfast with a decent source of proteins, vitamins, minerals and fiber. This sandwich is super flavorful, thanks to cilantro, onion and cumin. It will keep you full for a longer time. Make this sandwich with a low-fat or full-fat ricotta cheese or cottage cheese, either way this carrot and cheese sandwich is delicious and satisfying.

Carrot and Cheese sandwich Recipe

Ingredients
1/2 cup of ricotta or cottage cheese (you can use low fat)
1 medium grated carrot
1/4 of medium onion, finely chopped
1 Tbsp of cilantro / parsley
1 small green chilly, finely chopped
1/2 tsp of cumin powder
1/4 tsp of chaat masala or 1/2 tsp lemon juice
Salt and pepper to taste
4 whole grain bread or any bread you like
oil or butter for grilling
Directions
- Mix well all the ingredients listed above except bread. Give it a taste test, add more salt or chaat masala if you like.
- Spread this mixture generously between two slices of bread and grill it with a little butter or oil on a grill pan or in a sandwich maker. Do the same with remaining bread and stuffing.
- Carrot and cheese sandwich is done.
Notes
- You can serve carrot and cheese sandwich as a starters also, just use white bread and take the crust off the sandwich and divide the sandwich in halves or quarters.
- Serve carrot and cheese sandwich warm else the sandwich will get soft after a while.
- Do not add chilly, if you are making this sandwich for kids.
