Corn Cutlet Recipe

minutesCorn cutlets are sweet and spicy patties made up crushed corn kernels with green chilies, cilantro and bread crumbs and coated with saltines.
Ingredients
2 cups of corn
1/2 cup of bread crumbs
1-2 Tbsp of cornflour
1/2 of medium onion, finely chopped
4-5 green chillies, finely chopped
Small bunch of cilantro ,finely chopped
1 Tbsp of minced ginger
3 Tbsp of chopped peanuts
1 tsp of freshly toasted ground cumin powder
1 tsp of chaat masala
15-20 saltines crackers,crushed
Salt to taste
Oil for shallow frying
Directions
- If you are using fresh corn, then boil it in little water for 5-8 min and drain it well or if it is frozen corn, then just thaw it well.
- Coarsely chop the corn in food processor. Then in a bowl, mix well corn with ginger, onion, chillies, cilantro, peanuts, cumin powder, chaat masala, bread crumbs, corn flour and salt.
- Now divide the mixture in equal parts to form a oval shape patties. Coat patties in the crushed saltines and refrigerate it for 15-30 minutes.
- Heat oil in a wide pan over a medium-high heat and fry patties for about 5 min per sides or until it gets nice brown on both sides.
Notes
- Do not grind the corn very fine, just pulse it in food processor few times for coarse texture.
- Add little more bread crumbs or corn flour,if mixture is too wet.
