minutesThis potato salad is a healthy twist on a traditional potato salad fully flavored with cilantro, basil, capers and pickled dill.
Ingredients
6 medium yukon potatoes, boiled
1/3 cup of greek yogurt or drained yogurt(low fat is fine)
1 small green chilly, finely chopped
2 medium garlic cloves, finely chopped
2 Tbsp of basil, finely chopped
2 Tbsp of cilantro/parsley, finely chopped
1.5 tsp of capers, rinsed and rough chop
10 black olives, chopped
2 pickled baby dill, rinsed and diced
2 heaped tsp of dijon mustard
1-2 tsp of lemon juice
1/4 of red onion, chopped(optional)
Salt and pepper to taste
Directions
- In a big bowl, whisk yogurt, mustard, lemon, capers, dill, cilantro, basil, green chilly, garlic, salt and pepper.
- Cut the potatoes into a bite size pieces and put it in the above yogurt mixture with olives and mix well.
- Let it rest for aleast 1 hour. You can put it inside the refrigerator, if you like cold salad.
- Healthy potato salad with herbs is done and ready to serve.
- Use your favourite herbs in this salad. Mint and dill is also a great choice.
- Do not serve this potato salad immediately . Let the salad rest for a while to absorb all the good flavors .
