Squash stuffed with chickpea, onion, sun dried tomatoes and then topped with bread crumbs and almond mixture. Its yummy, healthy and easy to make.

Ingredients

  • 2 medium zucchini

  • 1/4 cup of cooked chickpeas

  • 1 garlic cloves

  • Half of medium onion,finely chopped

  • Few green chillies,finely chopped

  • Handful of almonds,chopped

  • 3 Tbsp of whole wheat bread crumbs

  • 1 Tbsp of sun dried tomatoes

  • 2 Tbsp of chopped cilantro or parsley

  • Salt to taste

  • 2-3 tsp of oil

Directions

  •  Preheat the oven to 400 degree F.
  •  Cut the zucchini in half and scoop out its flesh in a bowl.Now, brush the zucchini with oil,salt and pepper.
  •  Heat pan with oil and add onion,chillies and garlic and saute for about 3-4 minutes.Then toss in the zucchini flesh,salt,chickpea and cook for about 2-3 minutes .
  •  Mash half of the chickpeas with the back of the spoon .Remove the pan from the heat and add half of the both almonds and cilantro or parsley and sundried tomatoes.
  •  In a bowl, mix remaining cilantro and almonds with bread crumbs.
  •  Stuff the zucchini shells with chickpea mixture and then top it with breadcrumbs mixture,then spray little oil over the bread crumbs and bake it for about 15-20 minutes.

Notes

  • Add paneer or cheese instead of chickpea for a change.
