Thai corn fritters

Thai corn fritters are like cross between pancakes and fritters and is a lighter alternative for the deep fried corn fritters. Corn mixed with chilies, cilantro, scallions, soy sauce, eggs and rice flour, then cooked until brown on both sides like you do with the pancakes. The sweetness from the corn and the hot Thai chilies are just perfect together and will make people go for the seconds. The best thing about this fritter is that, it's not deep fried. 
In summers, the first thing you see in supermarket is fresh corn. Most of the time we make grilled or steamed corn on the cob or salad with it . So this time, try out these Thai corn fritters and you will be happy that you did. The recipe will be good with the frozen corn too. You just have to thaw and squeeze it little to remove extra moisture.
You can use all purpose flour instead of rice flour but keep in mind that the rice flour make these fritters extra light. It is perfect tea time snack especially in rainy season. The recipe is a no brainer and very easy and quick to put together.

Ingredients for Thai corn fritters :-

  • 2 cups of sweet corn kernels (fresh or frozen)
  • 3 scallions or 1/2 cup of onion, finely chopped
  • 2 green chilies or 1 small jalapeno, finely chopped
  • 1/2 cup of cilantro, finely chopped
  • 3 big of minced garlic
  • 1 Tbsp of soy sauce
  • 2 eggs, well beaten
  • 1/2 cup of rice flour
  • Salt to taste
  • 1/2 tsp of black pepper
  • 2-4 Tbsp of oil for shallow frying

Method for for Thai corn fritters :-

  1. If using frozen corn instead of fresh one, thaw it first and squeeze out the extra moisture.
  2. Mix corn, garlic, cilantro, eggs, rice flour, chilies soy sauce, scallions, pepper and salt together in a large bowl .
  3. Mixture should neither be too loose nor be too tight, just thick and firm enough to hold. Add little water or flour if it is too stiff or loose, respectively.
  4. Heat oil in a wide pan over a medium heat. Drop 2 tablespoons of mixture on a pan and spread it to make small disc.
  5. Repeat the same according to the size of the pan. Do not over crowd the pan .
  6. When the fritters are brown, flip it over and let it cook on the other side. It takes about 4-5 min per sides.
  7. Repeat same with the remaining batter and Thai corn fritters are ready to serve.

Serve Thai corn fritters hot with ketchup or sweet chilly sauce .
