Easy and yummy tomato soup recipe made with red tomatoes, carrot, garlic, bell pepper and cloves.

Ingredients

  • 4 large whole red tomatoes

  • 1 medium onion, chopped

  • 4-6 garlic cloves, chopped

  • 1 small carrot, peeled and chopped

  • 1/2 of small green bell pepper, chopped

  • 1 Tbsp of chopped cilantro

  • 2 bay leaves

  • 4 cloves

  • 1 tsp of kashmiri red chilly pepper or paprika

  • 1 Tbsp of ketchup

  • 1 Tbsp of cooked rice

  • 1 tsp of sugar(optional)

  • 3 cups of water/stock

  • Salt and pepper

Directions

  • Boil the whole tomatoes, keeping the lid on for 5-8 minutes or until the skin starts to tear up.
  • Switch off the heat, and take the tomatoes out and let it cool down a bit, then peel the skin out and chop it coarsely. Save the cooking liquid for later.
  • Heat oil in a pan then add cloves, bayleaves, onion, carrot, salt and let it sweat together for about 5 minutes.
  • Now add in the red chilly powder, green bell pepper, rice and chopped tomatoes and let it cook for 10 minutes, stirring in between.
  • Now turn off the heat and let the mixture cool down a bit, take out the bay leaves and then blend it in a blender .
  • Now pour the ground mixture back in the pan and add the ketchup, left over cooking liquid, salt, pepper and mix well.
  • Do the taste check. If it is too sour, add little sugar or if it is too thick, add little water or if it is too thin, cook it until it thickens.

Notes

  • Serve warm with croutons or Italian herb bread
  • Drizzle little cream over the soup if you like rich soup.
