Garam masala( Kerala syle)
Garam masala is a blend of roasted and ground aromatic spices. Just a little addition of this masala can spice up any simple dish. .
Yield :- 3/4 cup
Ingredients :-
- 1 Tbsp of cardamom(about 35-40)
- 30-35 cloves
- 2 cinnamon stick,
- 4 Tbsp of fennel powder
- 1 Tbsp of coriander seeds
- 2 star anise
- 1/2 Tbsp of black pepper corns
- 1/2 of one nutmeg
Method :-
- Dry roast cinnamon, star anise, cloves, cardamom, pepper corns, nutmeg over medium heat for 5-8 mins.
- Now add coriander and fennel and roast it further until it is slightly dark and very aromatic.
- Let it cool down, then put everything in the spice grinder or food processor and grind it to a fine powder.
- Store it in a airtight container.
