Poha chivda

Chivda is a very popular and healthy Indian snack. Poha(flattened rice) roasted with peanuts, cashews, raisins and few Indian spices makes this snack irresistable.

Ingredients :-

  • 4 cups of thin poha(flattened rice)
  • 3 cups of murmura (puffed rice)
  • 1/2 cup of raw peanuts
  • 1/2 cup roasted chana dal(daliya)
  • 1/4 cup of cashews, broken
  • 2 Tbsp of raisins
  • 2 Tbsp of dry cranberry
  • 5 sprig of curry leaves
  • 8-10 green chillies, slit lenghtwise
  • Red chilly powder to taste
  • 1.5 tsp of turmeric powder
  • 1 tsp of mango powder(optional)
  • 2 tsp of fennel seeds
  • 1.5 tsp of sugar
  • Salt to taste
  • 3 Tbsp of oil

Method :-

1. Dry roast poha and puffed rice in a pan on medium heat, stirring constantly until crisp or just heat it in a microwave on high for 2 mins, stirring in between.

2. Dry roast peanuts for 2-3 min, then add chana daliya and roast again for 2-3 minutes till the peanuts starts to shed its skin and dal is slightly browned.

3. Heat oil in a deep wide pan and add fennel seeds, green chillies, curry leaves and stir for 1-2 mins until the chillies and curry leaves are nicely fried.

4. Now add roasted peanuts and dal and broken cashews and stir for a min, then add raisins, cranberry, turmeric, mango powder, chilly powder, salt and again stir fry a minute.

5. Stir in the poha and puffed rice and mix well, so that each of it is nicely coated with all the masala.

6. Grind the sugar in a mortar pestle into a fine powder.

7. Once the poha and puffed rice gets crisp and yellow in color, switch off the flame and add powdered sugar. When chivda gets completely cool down, store it in a air tight container and it will be fresh for weeks.

  • Add your own choice of nuts and desired amount of chillies and salt.
  • You can also add potato sticks, banana chips or corn flakes.
