Pumpkin pancakes

Here comes Halloween and all I can see now is "PUMPKIN". So why not start the day with a perfect and healthy pumpkin pancake. Pumpkin puree, whole wheat flour and a few warm spices and it's already smells like Halloween.

Yield :- 10 pancakes
Ingredients :-

  • 1 cup of pumpkin puree
  • 1/2 cup sifted whole wheat flour
  • 1/2 cup sifted all purpose flour
  • 1/2 tsp of ginger powder
  • 1/2 tsp of cinnamon powder
  • 1/2 tsp of nutmeg powder
  • 1/4 tsp of clove powder
  • 1 tsp baking powder
  • 1 eggs
  • 1 Tbsp oil
  • 1.4 cup of low fat milk
  • 2 tsp sugar
  • 2 pinch of salt
  • oil or butter for greasing
  • Any syrup and fruits of your choice

Method :-

1. Sift together both of the flours and baking powder in a bowl. Now add salt and all the dry spices and mix well.

2. Beat egg with sugar,oil and pumpkin together. Then gently whisk milk into this mixture.

3. Combine the wet and dry ingredients just until blended.

4. Spray little oil in a hot skillet or pan and pour 1/4 cup of batter on to the pan and gently swirl it.

5. When you see little bubbles, flip the pancake and cook until golden brown.

6. Serve warm with your choice of fruits and syrup.

  • you can prepare the batter overnight and make it next morning, just add 1/2 tsp of baking powder to the batter in the morning and mix well.
