Ricotta pancake with strawberry sauce

Here the star ingredient is ricotta cheese not flour. Ricotta pancake is a soft and fluffy pancakes which combines creamy ricotta cheese with eggs, cornmeal and whole wheat flour.

Yield :- 6 pancakes
Ingredients for ricotta pancake :-

  • 3/4 ricotta cheese
  • 1 tsp baking powder
  • 2 eggs
  • 1 and half Tbsp oil
  • 1 tsp sugar
  • 1/4 cup sifted whole wheat flour
  • 1/4 cup of cornmeal
  • 1/4-1/3 cup milk

For strawberry sauce :-

  • 1 cup of crushed strawberry
  • 1-2 Tbsp of agave nectar
  • 2 Tbsp of orange juice

Method for ricotta pancake :-

1. Sift together the flour and baking powder and add corn meal and salt.

2. Beat eggs with sugar,oil and milk together. Then gently whisk cheese and vanilla into wet mixture.

3. Combine the wet and dry ingredients just until blended.

4. Spray little oil in a hot skillet or pan and pour 1/4 cup of batter on to the pan and gently swirl it.

5. When you see little bubbles, flip the pancake and cook until golden brown.

6. For strawberry sauce, put everything in a sauce pan and boil for 2-3 min.

7. Then switch off and let it cool for few min and serve warm ricotta pancake with strawberry sauce .

You can prepare the batter overnight and make it next morning, just add 1/2 tsp of baking powder to the batter in the morning and mix well.
