Cashew Cookies

These cookies are special as it reminds me of the cashew cookies which we used to have back in India. Coarsely chopped cashews, pistachios and little rice flour makes it a sweet delight.

These cashew cookies are made with mixture of white, whole wheat and rice flour mixed with cashews, sugar and butter.

Ingredients

  • 1 cup of all purpose flour

  • 1/4 cup of whole wheat flour

  • 1/4 cup of rice flour

  • 8 Tbsp of room temperature butter(1 stick)

  • 1/4 cup of brown sugar

  • 1/4 cup of white sugar

  • 1 Tbsp of honey

  • 1 Tbsp of milk

  • 1/2 tsp of baking powder

  • 1/3 cup of coarsely chopped cashews and pistachios

  • Pinch of salt

  • 1/2 tsp of vanilla extract

Directions

  • Cream butter and both the sugars together in a bowl until fluffy. Then add milk, honey and vanilla and mix well.
  • Now in another bowl mix all purpose flour, whole wheat, rice flour, baking powder and salt together.
  • Slowly add the dry mixture into the wet one and mix until well combined and form a smooth dough.(Do not knead it too much just mix well). Stir in the cashews and pistachios.
  • Cover the dough with plastic wrap and keep it inside the refrigerator for 1 hour.
  • Preheat the oven to 375 F and line the baking tray with parchment or wax paper.
  • Roll out the dough to about 1/4 inch and cut into desired shape and place it on the tray.
  • Bake it for 10-12 minutes. Let the cookies cool down a bit then transfer them onto a rack.
  • When the cookies are completely cooled, store it in airtight container.
