Chocolate Chip Candy Cane Cookies

There’s still a month left for Christmas and all the grocery stores are loaded with chocolates, cookies, cakes and candy in many different flavors, especially peppermint. Peppermint is one of the most popular Christmas flavors. While shopping, my eyes wandered off into the chocolate-candy aisle (obviously) and I saw beautiful candy cane lying there with other festival specialty candies. I bought a few candy cane but didn’t have any idea what to do with it and suddenly my bulb just went on and I decided to make chocolate chip candy cane cookies.

These chocolate chip candy cane cookies are crunchy cookies which are loaded with semi-sweet chocolate chips and crushed candy cane. Mint and chocolate go hand in hand and some people like me go crazy about this combination whether it is an ice cream or chocolates or drinks. Did I say, I have used whole wheat flour instead of all-purpose flour. Yes, these crunchy cookies have a healthy goodness of whole wheat flour. I have also used rice flour in this recipe which give a lightness to these chocolate chip cookies.
For people who does know about candy cane, it is a peppermint flavored hard candies in cane shapes. These candies are very popular around Christmas season in the USA.
There is crushed candy cane in the inside as well as the outside of cookies. I have dabbed each cookie with candy cane powder, so when it bakes in the oven, the candies melt and give these cookies a crunch.

A simple Christmas cookies recipe in which chocolate chips and crushed candies are used to make these cookies extra special.

Ingredients

  • Dry Ingredients :-
  • 1 cup of whole wheat flour

  • 1/2 cup of rice powder

  • 3/4 tsp of baking powder

  • 2 Pinch of salt

  • 3 Tbsp of crushed candy cane

  • Wet Ingredients :-
  • 1 stick of butter (1/2 cup)

  • 1/4 cup of white sugar

  • 1/4 cup of packed brown sugar

  • 1 tsp of vanilla extract

  • 2 Tbsp of milk or water

  • Remaining Ingredients :-
  • 2/3 cup of semi sweet chocolate chips

  • 3 Tbsp of finely crushed candy cane

Directions

  • Preheat oven to 350 F and lay parchment paper in the two cookie trays.
  • In a bowl, sift and mix dry ingredients well.
  • Then in another bowl, cream butter, white and brown sugar. Now add milk and vanilla and stir well. Do not over stir.
  • Add the dry mixture into the wet one, little by little and mix until everything is combined well. Add in the chocolate chips and mix again.
  • Now divide the cookie mixture into equal 20 parts and roll it and press it to form a small disc.
  • In a wide bowl, put crushed candy cane and dab each cookie into the candy powder and place it in the sheet pan.
  • Bake the cookies for 16-20 minutes until the cookies are lightly browned and the candy cane is melted.
  • Take out the cookies from the oven and let it sit in th e cookie tray for 2 minutes. Then transfer them to a cooling rack. Chocolate chip candy cane cookies are done.

Notes

  • Store chocolate chip candy cane cookies in an airtight container and it will good for a week.
  • You can replace rice flour with all purpose flour or almond flour.
  • If the cookie dough is getting difficult to come together, add little more milk.
