Cornmeal Thyme Cookies

Cornmeal thyme cookies are special cookies in which equal amount of cornmeal, white and whole wheat flour is combined with butter, sugar and tons of fresh thyme leaves.

These cookies are crispy on the outside and soft and buttery in the inside. You can see the beautiful specks of tiny green thyme leaves in the cookies. The cornmeal not only gives the cookies a beautiful yellow tinge but also provides crispy texture in every bite. The fresh thyme is on double duty here. It makes the cookies so pretty to look at as well as gives a lemony and minty flavor.
Cookies are simple and easy way to satisfy sweet cravings and these are specially good as you just have to bake once and you will have a box of sweet treats for weeks. And if the cookies are home baked that’s even better as you are aware of all of the ingredients in it.

Cornmeal thyme cookies are crispy on the outside and soft and buttery in the inside.

Ingredients

  • 1/2 cup of stone ground yellow cornmeal

  • 1 cup of all purpose flour (You can use 1/2 cup of whole wheat and 1/2 cup of all purpose flour)

  • 2 packed tsp of fresh thyme leaves

  • 1/2 cup of softened butter (1 stick) 

  • 1/2 cup of fine white sugar

  • 1/2 tsp of baking powder

  • 1 Tbsp of milk or water

  • Pinch of salt

Directions

  • Preheat oven to 350 F and grease the 12″ to 17 ” cookie tray and keep it aside.
  • In a bowl mix corn meal, flour, salt and baking powder well.
  • In another bowl, cream butter and sugar together with the help of whisk. Then add milk or water and thyme leaves and mix well.
  • Now add the flour mixture little by little into the butter mixture until well combined.
  • Now divide the dough into 16 equal parts, roll and flatten each dough into a small disc and place on a baking tray.
  • Bake the cookies for 16 minutes. Take out the cookies from oven and let it cool down for a minute or two.
  • Transfer the cookies on a cookie rack to cool down completely. Cornmeal thyme cookies are done .

Notes

  • Store the cookies in a airtight container and it will be good for 2 weeks.
    You can add a bunch of things in this cornmeal thyme cookie. Chocolate chips, butterscotch chips, cranberries or raisins are some of the options.
