Cranberry muffins with streusel topping is a moist, sweet and tangy muffins with cranberry goodness and a crispy crumbs topping. This muffin is a combination of cake and cookie in one bite, crunchy on the top and moist and soft in the inside.

Muffin batter made with usual ingredients like flour, baking powder, eggs, milk, oil and then fresh cranberries and white chocolates are added to make these muffins sweet and tangy. On top of it a streusel topping is added which makes it simply irresistible. A streusel or crumb topping is a crumbly mixture of flour, butter and sugar which is added on the top of cake or muffin batter. So when you take a bite of these muffins, you get sweet from the sugar and chocolate and tart from cranberries. These cranberry muffins are simply delicious because all of the different taste and texture together packed in one muffin.

Cranberry muffins with streusel topping is a party pleaser dessert recipe. This muffin has a moist cake like texture inside and crispy cookie like texture on top.

Ingredients

  • For Dry ingredients:-
  • 1.5 cup of all-purpose flour

  • 1.25 tsp of baking powder

  • 1 tsp of baking soda

  • 1/4 tsp of salt

  • For Wet Ingredients :-
  • 2 eggs

  • 1.25 cup of granulated sugar

  • 1/2 cup of oil

  • 1/2 cup of milk

  • 1 cup of cranberries, roughly chopped

  • 2 Tbsp of white chocolate

  • 1 tsp of vanilla extract

  • For Streusel Topping :-
  • 1/2 cup of all-purpose flour

  • 1 tbsp of old fashioned oats

  • 1/4 cup of room-temperature butter

  • 1/3 cup of sugar

  • 1/2 tsp of vanilla extract

Directions

  • Preheat oven to 350 degrees F. Oil the muffin tins or line it with muffin liners.
  • For streusel, mix flour, oats, sugar, vanilla and butter well with a fork or pastry dough blender in a bowl until the mixture looks like coarse crumbs. Keep this aside.
  • Mix the chopped cranberries and white chocolate with a tsp of flour and keep it aside.
  • Mix flour, salt, baking soda and powder in a bowl.
  • In a separate bowl, beat 2 eggs with sugar until the eggs look pale yellow in color.
  • Then add oil, milk and vanilla extract and whisk well.
  • Blend dry ingredient into wet one little by little and mix just enough to incorporate dry and wet ingredients well together. Do not over beat the batter.
  • Now add cranberries and chocolate mixture and mix well.
  • Divide the batter equal into prepared muffin pan, then top each muffin with an equal part of streusel topping and bake for 25-30 minutes or until it is golden brown on the top.
  • Take out the muffin pan from the oven and let it cool down a bit before taking the muffins from the pan.
  • Serve cranberry muffins with streusel topping warm or at room temperature.
