Grapefruit Quick Bread / Healthy Grapefruit Cake

Grapefruit quick bread is a healthy recipe in which oats, whole wheat and white flour are mixed with grapefruit pulp creating a fragrant citrusy cake. 

I love making and eating cakes, but your love for a cake can sometimes lead you to the unhealthy path. So I am always trying to replace refined flour with whole grain flour. Sometimes it’s a hit and other times a miss. So in this quick bread, I mixed oats flour, whole wheat flour and unbleached white flour to spike the fiber content and mixed with freshly made grapefruit pulp, semi-sweet chocolate chips and eggs. And the result was tender and moist bread or cake with deeply grapefruit essence. I served grapefruit cake with fresh grapefruit segments and chocolate sauce. The chocolate sauce I made was just two things, semi-sweet chocolate chips and freshly squeezed grapefruit juice. So there is a double punch of citrusy goodness.

Grapefruit quick bread is a healthy recipe in which oats, whole wheat and white flour are mixed with grapefruit pulp creating a fragrant citrus cake. 

Ingredients

  • For Dry Ingredients :-
  • 1/2 cup of all-purpose flour

  • 1/2 cup of whole wheat flour

  • 1/2 cup of old-fashioned oats 

  • 1.25 tsp of baking powder

  • 1/2 tsp of baking soda

  • 1 Tbsp of semi sweet chocolate chips 

  • Pinch of salt

  • For Wet Ingredients :-
  • 1/4 cup of coconut oil

  • 2 eggs

  • 1/2 cup of sugar +1/4 cup of honey/agave nectar

  • Zest of 2 grapefruits

  • 1 grapefruit for pulp 

  • Toppings :-
  • Segments and juice of one grapefruit

  • 2 Tbsp of powdered sugar

  • 2 Tbsp of semi-sweet chocolate chips(optional)

Directions

  • Grease and flour the 8.5 x 4.5 inch loaf pan or any desired cake pan
  • Process the oats in a food processor into fine flour, then mix all the dry ingredients together in a bowl.
  • Beat eggs, sugar, oil and agave nectar together in another bowl until the yolk turns pale.
  • Take the zest off of both the grapefruits and mix it into the egg mixture.
  • Now peel off the skin and pith of one of the zested grapefruits and cut it into segments and squeeze out the juice from the leftover membrane.(See note)
  • Process the segments and juice in a blender into a smooth juice or pulp about 3/4 cup.
  • Now mix in the pulp into egg mixture.
  • Now add the dry ingredients into wet one little by little until well combined.
  • Pour the batter into the prepared pan and bake at 350 F for 40-50 minutes or until the toothpick inserted comes clean.
  • Now for Topping :-
  • Peel off the skin and pith of the second grapefruit and again cut it into segments and squeeze the juice out of the membrane in a bowl.
  • Now mix well the powdered sugar with grapefruit section and juice and keep aside.
  • In another bowl, melt the chocolate and add 1-2 Tbsp of above grapefruit juice to thin it out into a smooth sauce.
  • When the bread is out of the oven brush the bread with the grapefruit juice. Let it completely cool down before cutting.
  • Serve grapefruit quick bread or cake with fresh grapefruit section and chocolate sauce.
