Healthy banana bread recipe

A yummy and healthy snack or breakfast of all time. This banana bread is loaded with healthy and fiber rich ingredients. It goes really well with tea or coffee but if you want to make this a dessert, serve this banana bread with whipped cream, chocolate sauce and some diced banana or other fruits.

This flavorful and moist healthy banana bread is made up with healthy ingredients like whole wheat flour, bananas, wheat germ, dates, flax seed and walnuts.

Ingredients

  • 2 cups of whole wheat flour

  • 1 tsp of Baking soda

  • 1 Tbsp of wheat germ

  • 2 pinch of salt

  • 1/4 tsp of nutmeg

  • 3 medium banana,roughly mashed

  • 1/3 cup of oil

  • 1/3 cup of brown sugar

  • 2 eggs

  • 6 dates, chopped

  • 1/3 cup of warm low fat milk

  • 1 Tbsp of flax seed meal(optional)

  • Handful of walnuts, chopped

  • 1 tsp of vanilla extract

Directions

  • Preheat oven to 350 degree F and grease 9 x 5 inch loaf pan.
  • Mix flour, salt, germ, baking soda in bowl.
  • Stir flax seed meal in warm milk and let it sit for 5-10 minutes. 4. In separate bowl beat 2 eggs with sugar then add oil,milk, banana, dates and vanilla extract.
  • Blend dry ingredient into wet mixture little by little and mix walnuts.
  • Pour batter into prepared pan and bake for 50 min then lower temp. to 300 and bake again for 10 min until a toothpick inserted into center of the loaf comes out clean .
  • Take out the bread and let it cool before slicing .

Notes

  • If you don’t have flax seed meal, then just increase measure of oil from 1/3 to 1/2 cup.
  • Serve as a dessert by adding a scoop of banana flavored or vanilla ice cream with it.
