Chicken Roast Kerala Style Recipe

Chicken Roast Kerala Style is an authentic Kerala recipe in which chicken pieces are roasted with pearl onions, ginger, garlic and blend of Indian spices.

Ingredients

  • 600 gms skinless and bone in chicken, cut into pieces

  • 2 cups of sliced pearl onion or 4 medium onion, thinly sliced

  • 2 green chilies, finely chopped

  • 2 inch of ginger ,finely chopped

  • 1 whole garlic head garlic, finely chopped

  • 2 sprigs of curry leaves

  • 1 tsp of mustard seeds

  • 1/2 tsp of fennel seeds

  • 1/2 tsp of turmeric powder

  • 1 tsp of black pepper

  • 2 tsp of Kashmiri red chilly powder

  • 1 tsp of coriander powder

  • 3 tsp of chicken masala

  • Salt to taste

  • 2 Tbsp of thinly sliced coconut pieces

  • 2-3 Tbsp of oil(preferably coconut oil)

  • 1/2 of lemon, juiced

Directions

  • Heat oil in a pan and add mustard seeds. When it splutters, add fennel, green chilies, curry leaves and ginger. Stir fry for 30 seconds.
  • Then add onions and again saute for 5 minutes. Now add garlic and mix.
  • Let the onion mixture cook until it becomes golden brown. Then add all the dry spices and again mix for half a minute.
  • Mix in the chicken and coconut pieces together and put on the lid and let it cook over low heat for about 30 minutes.
  • Now take the lid off and again cook it for about 20 minutes. (Add splash of water if chicken starts to stick to the bottom of the pan.)
  • Switch off the heat and add lemon juice. Chicken roast Kerala style is done

Notes

  • Serve chicken roast hot with Kerala parotta or chapati.
