Chicken with Grape Tomatoes

Often simple and quick recipes are tastier and this recipe proves this statement. Chicken with grape tomatoes is a quick and healthy recipe in which diced chicken breast is stir fried with Indian spices and mixed with sauteed grape tomatoes and garlic.
This recipe just came out of what was left in my refrigerator and pantry. I had some leftover multi-colored grape tomatoes sitting in my refrigerator and I was in no mood of eating salad, so this idea just came to me of making a quick but super flavorful sauteed chicken and grape tomatoes with Indian spices. When the chicken was almost done, I added large pieces of onion and cooked just enough so it will remove the raw flavor but still have that crunch. The sweet and sour grape tomatoes are almost flash cooked, you just want to cook them until soft but not mushy.
This recipe of chicken with grape tomatoes will fairly take about 20-25 minutes tops. So it is perfect for weekday dinner or lunch.
You can pair this with sauteed potatoes, steamed rice or bread.

Chicken with grape tomatoes is a quick and healthy recipe in which diced chicken breast is stir fried with Indian spices and mixed with sauteed grape tomatoes and garlic.

Ingredients

  • 2 boneless and skinless chicken breasts  (about 1 pound total)

  • 1/2 tsp of turmeric powder

  • 1 tsp of red chilli powder or to taste

  • 1 tsp of garam masala

  • 1 tsp of coriander powder

  • Salt and black pepper to taste

  • 1 large onion, peeled

  • 2 cups of grape tomatoes, halved

  • 5 garlic cloves, peeled and crushed

  • 2 Tbsp of basil or cilantro

  • 1 Tbsp of oil

Directions

  • Cut the chicken pieces into about 1-inch cubes and mix it with black pepper and salt. Cut the onion into 1-inch cubes and set it aside.
  •  Now in a wide pan, heat 1/2 Tbsp oil and add chicken. Stir fry until it is no longer pink.
  • Then add all the dry spices and onion and cook until it is done.
  • The total time to cook chicken cubes is about 6-8 minutes or until the internal temperature is 160F.
  • Now remove the chicken onto the plate and add remaining oil to the pan and add garlic, saute for 30 seconds and add tomatoes and cook for about 3-4 minutes.
  • You just want to cook the tomato until it’s skin is wrinkly and it burst its juices.
  • Now add chicken pieces back to the pan and mix everything well and switch off the heat. Chicken with grape tomatoes is done.

Notes

  • Serve chicken with grape tomato with crusty bread or sauteed potatoes or steamed rice.
