Fish in Foil Recipe / Baked Fish and Vegetables in Foil

Fish in foil packets is a super healthy protein dish which is very easy and quick to make.  Layered vegetables and white fish fillets which are dressed in soy sauce, ginger and lemon juice and baked in foil packets. Fish in foil packet is perfect for quick dinner recipes. Cooking fish and vegetables together in foil packet keeps the fish moist and flavorful. Use your favorite vegetable and seasoning or sauce in this recipe.

Sea fishes like mackerel, trout,  salmon, tuna, herrings are very good source of healthy fish oils called omega 3 fatty acids. Our body cannot create omega 3 fatty acids by itself, so oily fish is an easy way to get this nutrient. Fishes are also a good source of Vitamin B12, phosphorus and selinium.

Fish in a foil recipe is a layered vegetables and white fish fillets dressed in soy sauce, ginger and lemon juice and baked in foil packets.

Ingredients

  • 2 fillet of flounder or any white fish

  • 1 medium carrot, vertically and thinly sliced into 2-inch sticks.

  • 2 stalk of green onion or 1/4 of small thinly sliced onion

  • 2 tsp of julienned ginger

  • Hand full of cilantro or Thai basil, chopped

  • 1 Tbsp of low sodium soy sauce

  • 1/2 tsp of red pepper flakes or to taste

  • 1 Tbsp of lemon juice

  • 1 tsp of sesame oil

  • Salt and pepper to taste

Directions

  • In a small bowl, combine soy sauce, oil, red pepper flakes and lemon juice. Keep it aside. 
  • Marinate fish fillets with little salt and pepper. Be careful with salt because soya sauce is little bit salty already.
  • Take two sheets of aluminum foil large enough to fold over the fish. Preheat the oven to 400 F.
  • On each foil place half of the carrot, ginger and onion and sprinkle little salt and pepper over the veggies.
  • Now lay one of the fish over the veggies and pour half of the sauce mixture over the fish and veggies.
  • Fold the foil over the fish to make a pouch and seal the edges tightly. Do the same with other fish also.
  • Place both the packets in the baking tray and bake for 18-20 minutes until the fish is nice and flaky.
  • Fish in a foil packet is ready to serve. Be careful while opening the foil pouch, as the steam can hurt you.

Notes

  •  Serve fish in foil packet with baked spiced potato chips or potato salad with herbs .
  • Zucchini, green beans or tomatoes will also be great in this recipe instead of carrots. Feel free to use any of this vegetable you like.
  • Use any white fish or salmon in this recipe. You can also use frozen fillets, just thaw it out first before cooking.
