Kerala style chicken curry is a slow cooked spicy and creamy chicken curry which is fully flavored with homemade masala or roasted and ground spice mixture. Addition of coconut milk gives this curry a nice balance .
This chicken curry gets a special flavor and taste from the homemade roasted spice mixture like cinnamon, star anise, cloves, peppercorns and cardamom. There is no tomatoes used in this curry. Coconut milk adds creaminess to the dish.

Ingredients
- Marination :-
2 kg / 4.4 lb of skinless and bone in chicken, cut into pieces
Juice of one lemon
1 tsp of hot chilli powder
3/4 tsp of turmeric powder
Little salt
Spices to grind
6 cloves
10 peppercorns
5 cardamom pods
2 Tbsp of coriander seeds
2 staranise
1 stick of cinnamon
2 tsp of fennel seeds
2 heads of garlic cloves, peeled and roughly chopped
3 inch of ginger, peeled and chopped
2 Tbsp of Kashmiri chilly powder
- Other Ingredients :-
1 tsp of mustard seeds
3 sprigs of curry leaves
5 medium red onions, finely sliced
Few green chilies to taste, slit vertically
2 cups of thick coconut milk
Few cilantro leaves chopped
1-2 Tbsp of oil
Salt to taste
Directions
- Marinate chicken with lemon juice, chili powder, turmeric and salt for about 2 hours or overnight.
- Roast cloves, peppercorns, cinnamon, cardamon, coriander seeds, star anise and fennel seed over low heat. When it is aromatic and toasted, take the pan off from the heat and add chili powder and mix well.
- When the whole spices are cool enough to touch, grind every thing with garlic and ginger and some water.
- Now in a hot pan add oil, splutter mustard seeds then add curry leaves, onions, green chilies and salt.
- When the onions are light brown, add ground masala and stir for 5 min.
- When masala releases oil, add chicken with its marination and put on the lid and let it cook over low-medium heat to 45-50 minutes.
- When chicken is done, add coconut milk and simmer it for 5 more min.
- Add cilantro leaves and Kerala style chicken curry is done.
Notes
- Serve Kerala style chicken curry warm with rice or appam or even dosa.
