Soba noodle with shrimp and coconut milk is an amazing flavorful recipe in which soba noodle is tossed in spicy and salty coconut sauce.

Ingredients

  • 2 bundles of soba noodle

  • 1 pound of raw shrimp, peeled and deveined

  • 1 medium red bell pepper

  • 1 pound of broccoli about 2 cups

  • 1 medium onion, chopped finely

  • 1 Tbsp of chopped ginger

  • 4 big cloves of garlic, finely chopped

  • 2 green chillies, finely chopped

  • 2 dry red chillies(optional but I like it spicy)

  • 2/3 cup of veggie/chicken/seafood stock or just use water

  • 3/4 cup of coconut milk

  • 1/4 cup of thai basil, chopped

  • 1/4 cup of cilantro

  • 1 tsp of garam masala/curry powder

  • 1 Tbsp of all purpose flour

  • Salt and pepper to taste

  • juice of 1/2 of medium lemon

  • 1 Tbsp of oil(I prefer coconut oil)

  • 2 sprig of curry leaves(optional)

Directions

  • Cook noodles in a salted water according to the package direction. Drain and rinse the pasta with cold water and set aside.
  • Cut the broccoli head into medium sized florets and chop the stalk finely around the size of your chopped onion.
  • In a bowl, toss the shrimp with lemon juice, salt and pepper and let it sit for 10-15 minutes.
  • In a big pan, heat oil, then add red and green chilies, ginger and curry leaves and stir for a minute.
  • Now add onions, salt, pepper and stalk of broccoli and let it cook until translucent.
  • Add garlic and stir it for 2-3 minutes and then mix in the flour and let it cook for 2-3 min.
  • Mix in the red bell pepper, garam masala and stock and let it come to a boil over medium heat.
  • Now add coconut milk, shrimp and broccoli and put on the lid and cook over low-medium heat until the shrimp starts to curl up.
  • Then add in the soba noodles and let it simmer until the shrimp turns pink and is fully cooked.
  • Lastly mix in the cilantro and basil and serve.

Notes

  • Normally shrimp takes 3-5 minutes to cook but here we are cooking it further longer because we add shrimp, milk and broccoli together which are in room temperature so it will take little longer to cook .
  • Shrimp will take around 3-6 minutes to cook. It all depends on how much heat you are using to cook the shrimp and also whether the shrimp are fresh or frozen.
