This Tequila chicken recipe is a delicious grilled chicken recipe in which chicken is marinated in tequila, lime juice, garlic, jalapenos and grilled to juicy perfection.

Ingredients

  • 2 split chicken breast, bone in and skin on

  • 3 big lime, zested and juiced

  • 3 Tbsp of gold tequila

  • 4 big garlic cloves, finely chopped

  • 1/2 tsp of black pepper

  • Red chilly powder to taste

  • 2 Jalapenos or 2-3 green chilies, finely chopped

  • 1 Tbsp of soy sauce

  • 4 Tbsp of chopped cilantro

  • salt to taste

  • 1 Tbsp of oil

Directions

  • Make a long slit along the side of the breast, to make a pocket (don’t slit the skin).
  • Mix rest of the ingredients together except oil and put chicken in a zip lock or any container with tight lid and pour marination on to the chicken and let it marinate overnight.
  • Heat a grill pan with oil on medium-high heat. Take out chicken from the marinade and shake off the excess liquid and place the chicken skin side down on the hot pan.
  • When the skin side gets nicely charred, flip and let it cook for another 4-6 min.
  • You will be left with a lot of excess marinade. Strain the liquid part of marinade in a bowl and set aside the remaining(this needs to be stuffed inside the chicken). Boil the liquid part of marinade for about 2-3 mins(for brushing purpose)and set aside.
  • Take the chicken and stuff the pockets with the marinade. Pour the remaining oil from the pan over the chicken and bake for 35-40 min, brushing in between with liquid marinade at 350 F until the internal temperature reads 160 F. Tequila lime chicken is done.
