hours or overnightThis Tequila chicken recipe is a delicious grilled chicken recipe in which chicken is marinated in tequila, lime juice, garlic, jalapenos and grilled to juicy perfection.
Ingredients
2 split chicken breast, bone in and skin on
3 big lime, zested and juiced
3 Tbsp of gold tequila
4 big garlic cloves, finely chopped
1/2 tsp of black pepper
Red chilly powder to taste
2 Jalapenos or 2-3 green chilies, finely chopped
1 Tbsp of soy sauce
4 Tbsp of chopped cilantro
salt to taste
1 Tbsp of oil
Directions
- Make a long slit along the side of the breast, to make a pocket (don’t slit the skin).
- Mix rest of the ingredients together except oil and put chicken in a zip lock or any container with tight lid and pour marination on to the chicken and let it marinate overnight.
- Heat a grill pan with oil on medium-high heat. Take out chicken from the marinade and shake off the excess liquid and place the chicken skin side down on the hot pan.
- When the skin side gets nicely charred, flip and let it cook for another 4-6 min.
- You will be left with a lot of excess marinade. Strain the liquid part of marinade in a bowl and set aside the remaining(this needs to be stuffed inside the chicken). Boil the liquid part of marinade for about 2-3 mins(for brushing purpose)and set aside.
- Take the chicken and stuff the pockets with the marinade. Pour the remaining oil from the pan over the chicken and bake for 35-40 min, brushing in between with liquid marinade at 350 F until the internal temperature reads 160 F. Tequila lime chicken is done.
Notes
- Serve tequila lime chicken warm with salads and fried brown rice or Baked spiced potato wedges .
