White chicken chili recipe

White chicken chili is a Tex-Mex style spicy stew recipe in which chicken, beans and chili peppers are cooked together with flavorful spices. It is one hot, hearty and healthy bowl of chunky goodness. 
Chili which is an American name for “chili con carne” is a spicy stew normally made with meat, one or more type of beans, tomatoes and chili pepper with few Mexican spices. Chili means chili peppers and carne means meat in Spanish.
Normally Tex-Mex chili dish red in color because of all the tomatoes, red beans and red chili peppers used but in my recipe of chicken chili, ground chicken are sauteed with onion, garlic and poblano pepper and then simmered with white beans, corns and flavored with spices like cumin, oregano and fennel. No tomatoes or red beans are used , hence the name ” white chicken chili”>
White chicken chili is perfect for cold weather. It is a nice, healthy and low fat alternative to traditional tomato based beef chili.

White chicken chili is a Tex-Mex style spicy stew recipe in which chicken, beans and chili peppers are cooked together with flavorful spices. It is one hot, hearty and healthy bowl of chunky goodness. 

Ingredients

  • 1 pound of ground chicken

  • 2 cans (15 ounce) of great Northern beans

  • 1 large onion, finely chopped

  • 1 medium poblano pepper, finely chopped

  • 1/2 medium red bell pepper, diced into small pieces

  • 1/2 cup of corn kernels

  • 4 minced big garlic cloves

  • 2 tsp of dried oregano

  • 3 tsp of cumin powder

  • 1.5 tsp of fennel powder

  • 1 tsp of ancho chili powder

  • 1 tsp of cayenne pepper or  to taste

  • 2 cups of chicken stock/broth

  • 1 Tbsp of flour

  • Salt and black pepper to taste

  • 1 Tbsp of oil

  • 2 Tbsp of chopped cilantro

  • 1 Tbsp of lime juice

Directions

  • Heat oil in a pan and add onion, poblano pepper and stir until onion is translucent, then add garlic and let it cook for a minute.
  • Now add chicken, salt, pepper, cumin, fennel, oregano, cayenne, chilly powder and mix well.
  • Cook the chicken till it is no pink, stirring frequently (It will take about 6-8 mins). Add the flour to the chicken and mix well.
  • Now add beans, bell pepper, corn and stock and simmer for 30 minutes until it is nice and thick and the liquid is reduced to its half.
  • Lastly add in the cilantro, lime juice and mix well. White chicken chili is ready to serve.

Notes

  • Serve hot with corn bread  or tortilla chips.
    Sour cream or avocado can be used as toppings.
    Use white meat to make it a perfectly healthy bowl of chili.
