Aloo dhaniya paratha

Aloo dhaniya paratha is a flavorful and easy paratha or flatbread recipe which is a green twist on regular aloo paratha. "Aloo" means potato and "dhaniya" means cilantro in Hindi.  Aloo paratha in general means whole wheat flatbread stuffed with potato filling.

The addition of lots of cilantro and garlic makes this paratha super yummy and healthy. This paratha is little different from regular aloo paratha in which boiled potatoes or aloo are sauteed with onion, chilies and spices. So the stuffing is normally yellow in color but the stuffing of this aloo dhaniya paratha is green in color. Ingredients:-
Stuffing for aloo dhaniya paratha

  • 3-4 medium size potatoes(boiled)
  • 1/2 cup of cilantro
  • 3-4 big garlic cloves
  • 2-3 green chilies
  • Salt to taste
  • 1 tsp of roasted cumin powder

Method for aloo dhaniya paratha

  • 2 cups of whole wheat flour
  • 1 cup of water
  • 1/4 tsp of salt
  • 1/2 tsp of ajwain or carom seeds
  • 1/2 tsp of fennel seeds
  • 1 tsp of oil
  • oil for pan frying
  • Little flour for dusting

Method for aloo dhania paratha :-

  1.  Mix flour, salt, fennel, carom, oil and water together to make a nice and soft dough. Use less or more water, if needed. Cover it with a damp towel and let it rest for about 10-15 minutes.
  2.  Chop the cilantro and chili very fine and grate the garlic cloves. Mash the potatoes and add cilantro, garlic, chilies, cumin and salt to it and mix well.
  3.  Take a small lemon size ball of dough and flatten it out to a little disc and put some stuffing (about 2-3 tsp) in there and stretch the edges of the dough and cover the stuffing.
  4. Pat the stuffed dough with little flour and roll out it in floured surface to make about 6"-7" diameter of a circle. Repeat same with the rest of the dough and stuffing.
  5. Heat a tawa or skillet in medium-high heat and place the paratha and let it cook for few seconds until it gets slightly puffed. Flip the paratha and when the brown spots appear, spread oil with the back of the spoon and again flip and spread oil and press the puffed area with a spatula until the paratha is golden brown.

Serve aloo dhaniya paratha with boondi raita or any raita. It also goes well with tomato chutney.
