Kale and smoked mozzarella pasta is a quick and healthy lunch or dinner which can be prepared in just 20 minutes.

The sauce is pretty simple with quickly sauteed tomatoes, garlic and kale and at last addition of whole grain pasta, smoked mozzarella and basil. The smoky taste of mozzarella goes really well with tangy tomatoes and nutty whole grain pasta.
Kale is a tough green and also little bitter in taste, so cooking it in the tomato sauce makes it very tender and remove its bitterness and when the cheese is added the sauce becomes thick and creamy.
The idea of this dish literally came from some of the leftover vegetables and cheese in my refrigerator at the end of the week. And the results was delicious and nutritious pasta dish.

Ingredients for kale and smoked mozzarella pasta :-

  • 1 tsp of oil
  • 2 big garlic cloves, finely chopped
  • 8 ounces of tomatoes, chopped
  • 1/4 tsp of red pepper flakes
  • 1 cup of chopped kale leaves, ribs removed
  • Salt to taste
  • 2 ounce of any small whole grain pasta
  • 2 oz of smoked mozzarella cubed
  • Few basil leaves, torned about a Tbsp

Method for kale and smoked mozzarella pasta :-

  1. Boil water pasta. When it starts boiling, add salt and pasta and cook according to the package direction.
  2. Meanwhile, in a wide pan, heat oil then add the garlic, red pepper flakes, tomatoes and salt and cook for 6-8 minutes over medium heat.
  3. When the tomatoes are soft and release its water, add in the kale and cook again until the kale is done about another 5-8 minutes.
  4. Now turn off the heat and add the pasta, cheese and basil and mix well.
  5. Kale and smoke mozzarella pasta is done.

Serve kale and smoked mozzarella pasta with a side salad or grilled chicken.
