Methi paratha / how to make methi paratha

Methi paratha is an Indian flatbread recipe with the goodness of whole wheat flour and fenugreek leaves. It is super flavorful and healthy recipe for which every Indian are proud of.

There are many ways to make methi parathas. Every person has their own family recipe for methi paratha. Some people chop the methi leaves and mix it with the flour and other saute it with ginger and garlic and many other spices and then mix it with the flour to make a dough. But here, in my version of methi paratha, I am cooking methi leaves with little water for just 3-4 minutes and then making dough by mixing it with flour. I grew up eating this methi paratha, especially in winter as you can find these fresh and green methi bunch in every vegetable market in India, through out the winter.
Normally methi paratha is served in breakfast but you can eat it in any time of a day. The only hassle with any recipe with methi is to pluck the methi leaves out of its stem, as it can take a little time to do that. But it is totally worth the effort because methi are power house of nutrients.

Yield :- 10 methi parathas
Ingredients for methi paratha :-

  • 2 cups of whole wheat flour
  • 1.5 cup of methi leaves
  • 1/2 tsp of fennel seed
  • 1/2 tsp of turmeric powder
  • 2 green chillies or to taste, finely chopped
  • 2 tsp of oil
  • Salt to taste
  • Water for making dough
  • Oil for roasting parathas
  • Some extra flour for dusting parathas

Method for methi paratha :-

  1. Pick methi leaves off of stem and rinse it well. The methi leaves should be about 1.5 cup.
  2. In a heated pan, put methi leaves while it is still wet and add salt and put on the lid.
  3. Cook methi for 2-4 minutes, stirring in between until it is wilted.
  4. Now when the wilted methi cools down, add it to the flour with turmeric, fennel, chillies and required salt.
  5. Careful while adding salt as you have added salt to methi also .
  6. Pour water litte by little and form a soft and pliable dough.
  7. Cover it and let it rest for 30 minutes.
  8. Heat a griddle on medium heat. Divide the dough into 8-10 equal size balls. In a small plate put some flour for dusting parathas.
  9. Then take a dough ball, press it little on dry flour with your hands and roll it out with rolling pin into a 6 inch diameter circle using some flour  .
  10. Roast the parathas with little oil on both sides until it is nice and brown.
  11. Repeat same with the rest of the dough and methi paratha is done .

Serve methi paratha with Tomato coconut chutney and Carrot raita .

Health check :- Methi leaves or seeds (fenugreek) are loaded with innumerable health benefits. It is used as one of the best home remedies for many problems ranging from beauty to many health problems. Methi is a good source of vitamin C, vitamin K, phosphorus, iron, calcium, niacin, fiber and also protein. So it's definitely wise to include methi in your diet.
