Mint and basil rice
This green rice with peas is prepered by sauteing rice with mint, thai basil, ginger and little tamarind. This is very fragrant rice dish.
Yield :-4 servings
Ingredients :-
- 1.5 cup of rice
- 3/4 cup of mint leaves, tightly packed
- 3/4 cup of thai basil, tightly packed
- 1 inch of ginger
- 2 gren chillies
- half of lime size tamarind
- 1 medium onion, sliced
- 1/2 cup of green peas
- 6-8 cashew, roasted
- 1 inch of cinnamon stick
- 3 cardamom
- 5 cloves
- 5 black pepper corns
- 1 tsp of cumin seeds
- 1 tsp of mustard seeds
- Salt to taste
- 1 Tbsp of oil
Method :-
1. Cook the rice with salt in 3 cups of water. Then spread it out evenly on a plate to cool it down.
2. Soak tamarind in 1/4 cup of warm water for 20-30 minutes. Then sqeeze out the water from tamarind in a bowl.
3. Grind mint, basil, ginger and chillies together with tamarind water and set aside. Crush cardamom, cloves and pepper with mortar and pestle.
4. In a wide pan, heat oil and splutter mustards seeds then add cumin, cinnamon and crused dry spices and stir it for a 30 sec.
5. Now add onions and saute it until it becomes translucent. Then add the peas, salt and ground mint mixture and let it cook for 2-3 minutes over medium heat .
6. Lastly add in the rice and toss well so that each grain of rice is nicely coated with mint mixture and add Check for the salt and mix in the cashews and serve.
- This recipe will be good for left over rice.
- Use cilantro instead of thai basil.
- Serve this with Tomato raita or Kerala chicken curry.
