Namkeen paratha is a salty and spicy paratha recipe stuffed with almond, flax seeds and chili mixture, hence the name almond flax seeds paratha.

This namkeen paratha may not be the most low-fat breakfast recipe, but it is pretty healthy with the health benefits of flax seeds, almonds and whole wheat flour. Peanuts add an awesome flavor and bumps up the protein content of the paratha.
I normally eat one namkeen paratha with a cup of my favorite ginger tea and I am good for few hours, as this is a very filling paratha and keep you full for longer hours. But sometimes my inner greedy sense screams for more as this paratha is really tasty .
The best thing of this almond flax seeds paratha is that you can make ahead the dough and filling and refrigerate it until you are ready. Just bring the dough to a room temperature before rolling out the paratha and if you are in a hurry, you can just microwave the dough for 5-7 seconds on low power.

Ingredients for namkeen paratha / almond flax seeds paratha :-
For dough :-

  • 1 cup of whole wheat flour
  • 1/4 tsp of ajwain / carom seeds
  • Salt to taste
  • Water for dough (about 1/4-1/3 cup)

Stuffing :-

  • 2 Tbsp of almonds
  • 2 Tbsp of peanuts
  • 1 Tbsp of flax seeds
  • 1/2 tsp of turmeric powder
  • 1/2 tsp of chili powder or to taste
  • Salt to taste
  • oil / ghee for brushing

Method for namkeen paratha / Almond flax seeds paratha :-

  1. Mix flour with salt and carom seeds and slowly add water to make a soft dough. Cover it with damp kitchen towel and let it rest for 20 minutes.
  2. Grind almonds, peanuts, flax seeds into a powder and mix it well with chili, turmeric and salt
  3. Now divide dough into five equal balls and nuts mixture into 5 equal parts.
  4. Roll out the dough into a small circle and stuff with a part of nuts mixture. Bring the edges of the rolled out dough together to cover the stuffing.
  5. Pat the stuffed dough with little flour and roll out it in floured surface to make a disk of desired thickness(about 5-6-inch diameter). Repeat same with the rest of the dough and stuffing.
  6. Heat a tawa or skillet in medium-high heat and place the paratha and let it cook for few seconds until it gets slightly puffed.
  7. Flip the paratha and when the brown spots appear, brush little oil with the back of the spoon and again flip and spread oil and press the puffed area with a spatula until the paratha is golden brown. Namkeen paratha is ready to serve.

Serve warm namkeen paratha or almond flax seeds paratha with Apple raita or Tomato chutney or meetha achar.
