Pasta with scrambled eggs

Pasta dish in which whole wheat angel hair pasta tossed with veggies, scrambled eggs and spiced with hot chilli garlic sauce . It's very simple and quick dish.

Yield :- 2 servings
Ingredients for pasta with scrambled eggs :-

  • 1 medium onion sliced
  • 1 stalk of celery thinly sliced
  • 3 big garlic cloves minced
  • 1 carrot thinly sliced
  • 1/4 cup of boiled endamame/frozen peas
  • 1 cup of thinly sliced cabbage
  • 2 tsp of chilly-garlic sauce(add more accordingly)
  • 1/3 lb of whole wheat angel hair pasta
  • 2 eggs
  • salt and pepper to taste
  • 1/4 cup of chopped cilantro or parsley
  • 1 Tbsp of oil

Method for pasta with scrambled eggs:-

1. Boil pasta with salt according to the package direction.

2. In a cold wide pan, add oil, garlic and saute it on a low heat. When garlic changes color to light brown, add onion and cook it for 2-3 minutes.

3. Now add in carrots and saute for 2 minutes. Add cabbage, endamame, chilly sauce and again saute for 1-2 minute. (do not over cook the veggies. It should retain its crunch) 4. Beat eggs with salt and pepper in bowl. Move away all the veggies around the corner and pour eggs at the center of the pan and cook it on a low heat stirring contantly.

5. When the egg are cooked, mix it with veggies and add pasta with 2 Tbsp of pasta water and mix well.

6. Stir in cilantro and pasta with scrambled eggs is ready to serve.
