Rice with black eyed peas and green beans

Sauteed green beans and onion mixed with cooked rice and black eyed peas and flavoured with pav bhaji masala. It is a one pot meal.

Yield :- 4 servings
Ingredients :-

  • 1 cup of rice
  • 1 cup of dry black eyed peas, soaked overnight
  • 1 large onion, finely sliced
  • 1/2 lb of green beans, cut into 1/2 inch pieces
  • 1 tsp of cumin seeds
  • 1 tsp of fennel seeds
  • 2 Tbsp of peanuts
  • 2 tsp of garam masala/pav bhaji masala
  • 1/4 tsp of turmeric
  • 1/2 tsp of red chilly powder
  • 1/2 of a big lemon
  • Salt and pepper to taste
  • Handful of cilantro/parsley, chopped

Method :-

1. Cook the peas in enough water with salt until it is nicely done. Now strain the peas through a seive and do not discard its cooking liquid.

2. The left over cooking liquid should be 2 cups if not, add water.Now boil this liquid.

3. When the water starts boiling, add required salt, rice and cook it over medium heat until all the liquid is absorbed.(the ratio of rice to water should be 1:2)
4. Let the rice cool down completely.

5. Now in a wok, heat oil and add peanuts and stir it for a minute then add cumin and fennel seeds and again stir for 30 seconds. Put in the onions and let it cook for 2 minutes.

6. Then mix in the green beans and put on the lid and let it cook for 5 minutes or until it is cooked but still holds its crunch.

7. Now mix in the pav bhaji masala, turmeric, red chilly, salt and pepper and stir for 30 secs.

8. Then stir in the black eyed peas and cooled rice and mix gently. Let it cook on low heat until warm through. Lastly mix in cilantro and lemon juice.
 

  • It's a one pot meal perfect for weeknight dinner or lunch.
