Vegetable spaghetti with cannellini beans and mustard lemon dressing

Vegetable spaghetti with mustard lemon dressing is a feel good pasta with stir fried tri coloured bell peppers, onion, cabbage and broccoli with mustard-lemon vinaigrette. Cannellini beans makes this dish complete. It is one easy and healthy pasta dish.

Ingredients for vegetable spaghetti with mustard lemon dressing

  • 8 oz of whole wheat spaghetti
  • 1 medium green bell pepper, thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 medium yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 1 cup of thinly sliced red or green cabbage
  • 2 heaped cups of broccoli cut into small florets
  • 1.5 cups or 15 oz can of cooked cannelllini or white beans
  • 1/2 tsp of black pepper powder
  • 1 Tbsp of oil

For mustard lemon dressing :-

  • 2 Tbsp of lemon juice
  • 2 Tbsp of good extra virgin olive oil
  • 1 Tbsp of dijon mustard
  • 2 medium garlic, grated
  • 3/4 tsp of red pepper flakes or to taste
  • 2 tsp of honey
  • Salt and pepper to taste

Method for vegetable spaghetti with mustard lemon dressing :-

1. In a bowl, whisk well all the ingredients listed under dressing and set it aside. Drain the water from white beans and rinse it well and keep that aside too.

2. Cook the pasta according to the package direction with salt. Drain the pasta and save some of its cooking liquid.

3. Mean while heat oil in a big wide pan, add onion and stir over high heat for 3-4 minutes, then add bell peppers and stir again for 1 minute.

4. Now throw cabbage, drained cannellini beans, little salt, pepper and broccoli and stir fry until broccoli becomes bright green and tender but still retains its crunch.(Donot cook the veggies too much.)

5. Add the cooked spaghetti to the vegetable mixture with about 2-4 Tbsp of pasta water and pour the dressing over it. Switch off the heat and toss everything together.

Serve warm vegetable spaghetti with mustard lemon dressing with toasted walnuts or almonds .
