“Who doesn’t love bhindi”. This bhindi raita is so thick and creamy with fried mustard, fennel seeds and chilies which gives it a nice flavor and nuttiness. Thinly chopped and fried bhindi (okra), mixed with yogurt and seasoned with few Indian spices. Bhindi raita is one tasty raita to have with rice and dal (lentil). Bhindi is a Hindi name for okra or ladies finger. Bhindi is very popular and common vegetable of India. 

Bhindi raita is very simple yet delicious raita recipe which takes few minutes to make. This raita is definitely a crowd pleaser recipe and it is perfect for parties and get together.

Health check :- Okra or bhindi is a store house of nutrients. It is great source of fiber and considered to prevent constipation, gas and bloating. It is also rich in vitamin C, folate, vitamin K, calcium, zinc and many other nutrients. So to maximize the intake of all these nutrients remember to cook okra or bhindi over low heat, as high heat can kill many of its health benefits.

Bhindi raita is a yogurt based Indian side dish with crispy okra and some Indian seasonings in it. It is good with lentil and rice or pan fried chicken or even in the wrap or burgers.

Ingredients

  • 1 lb of Bhindi (okra/ladyfinger)

  • 1.5-2 cups of yogurt

  • 1 tsp of each mustard seeds and cumin seeds

  • 4-5 dry red chillies

  • 1/4 tsp of fennel seeds

  • Few green chillies and cilantro sprigs

  • 1/2 tsp of black rock salt

Directions

  • In a wide pan heat oil,add mustard seeds, once they pop add cumin ,fennel and red and green chilies.
  • Now add bhindi, salt and cook till it becomes slightly crispy .
  • Beat yogurt in bowl with rock salt .
  • When Bhindi is done, let it cool slightly and then add it to beaten yogurt .
  • Mix in chopped cilantro and bhindi raita is done. Serve with Plain or stuffed paratha or rice and dal or Parippu curry Kerala style.

Notes

  • This bhindi raita is very thick, so you can use it in burgers instead of tartar or mayonnaise sauce.
