Chickpea with wilted spinach is a very simple salad but it is full of flavors and colors and very quick to prepare.

Ingredients

  • 1.5 cup of cooked chickpea/garbanzo

  • 2 cups of spinach, chopped

  • 1 small red or yellow onion(about 1/4 cup), finely chopped

  • 1 medium tomato, finely chopped

  • 2 Tbsp of chopped cilantro

  • 1 big garlic clove, finely chopped

  • 1 small green chilly, finely chopped

  • 3/4 tsp of cumin powder

  • 1 Tbsp of lemon juice

  • 1 Tbsp of extra virgin olive oil(skip if you want oil free salad)

  • Salt and black pepper to taste

Directions

  • Wash the spinach and drain the water. Do not completely wipe out the water because we need little bit of water to cook the spinach.
  • In a hot non stick pan, add spinach, salt and pepper and let it wilt over medium heat. It takes about 3-5 minutes.
  • In a big bowl mix together all ingredients listed above with wilted spinach.
  • Let it sit for 10-15 minutes and serve. Serve it with baked sweet potatoes chips

Notes

  • Add some raisins for little sweetness or add toasted almonds or walnut for crunch.
