Kale mango salad

Kale mango salad is a healthy and pretty green salad in which kale is first massaged with oil and mixed with mango, avocado and lime juice.

Kale is very tough green when it comes to salads but when it is massaged with oil and salt, it becomes tender and perfectly ready for any salad. The trick to any good salad is a combination of different flavors and textures.   The perfect pairing of vegetables, nuts and fruits can make any salad a hit. So here in this kale mango salad, the earthy kale is combined with sweet and juicy mango and creamy and fleshy Hass avocado. Walnut is also included here to give this salad a crunch factor.

Kale is one of the healthiest greens around. It is a super source of antioxidants and also rich in various vitamins like  A, K, C and B6 and minerals like manganese, copper, calcium, magnesium, potassium etc.

So try out this super healthy salad with any of your favorite grilled fish/chicken/paneer or tofu recipe.

Kale and mango salad is one of my favorite salad in which kale is massaged with oil and salt and then mix with mango and avocado.

Ingredients

  • 1 bunch of curly kale ( I used red kale)

  • 1/2 Tbsp of extra virgin olive oil

  • 1 medium ripe mango, peeled and cubed

  • 1 medium Hass avocado, peeled and cubed

  • 1/2 of lime, juiced

  • 8-10 walnuts halved

  • Few cranberries (optional)

  • Salt and pepper to taste

Directions

  • Wash kale thoroughly and tear the leaves from its stem and julienned the leaves.
  • Now drizzle oil and salt over the leaves and massage the kale for few seconds. ( it will soften the leaves)
  • Now add avocado, mango, cranberries, lime juice, salt and pepper and mix .
  • Let the salad rest for 20-30 minutes.
  • Before serving, add the walnuts and kale mango salad is done.
  • Serve kale mango salad with grilled salmon or grilled chicken. It also tastes good with grilled tofu.
