Red cabbage and black chickpea salad is a cocktail of different flavors and textures in a single healthy bowl. The crunchiness from red cabbage, nuttiness from black chickpea, sweetness from strawberries, creaminess from avocado and spiciness from pickled jalapeno makes a super healthy yet super tasty salad.
Black chickpeas are smaller than regular white chickpeas or garbanzo beans. It is nuttier in taste and has a bite to it as the dark skin of chickpea is little on tougher side. Black chickpeas are supposed to have higher fiber content than any other variety of chickpea. Though it is very easily available in any Indian or Asian grocery store but if you want to make this salad instantly, you can use canned white chickpea or black beans. But the nuttier taste and chewy texture of black chickpea will not be there. This salad is not only nutritious and tasty but also very beautiful to look at. It is all about the colors, flavors and textures of different vegetables and fruits combined in one platter.
Red cabbage and black chickpea salad is a vegan recipe which can be served as one pot meal at any busy weekday or can be served for a crowd as an appetizer. It is definitely a crowd pleaser salad recipe.

Red cabbage and chickpea salad is a delicious salad with red or purple cabbage, chana or black chickpea, avocado, corn, strawberries and simple lemon vinaigrette.

Ingredients

  • 1.4 cups of red cabbage, finely chopped

  • 2 cups of cooked black chickpea (kala chana)

  • 6 medium strawberries, finely chopped

  • 1 medium tomato, chopped fine

  • 1 Avocado diced

  • 1 medium garlic finely chopped (optional)

  • 1/2 cup of cooked corn kernels

  • 1 tsp of finely chopped pickled jalapeno

  • Juice of 1/2 of lemon

  • 1/2 Tbsp of extra virgin olive oil

  • 1/4 cup of chopped cilantro or parsley

  • Salt and pepper to taste

Directions

  • Gently mix all the ingredients in a bowl together.
  • Keep it aside for 30 minutes, so all the ingredients come together.
  • Red cabbage and black chickpea salad is done and ready to serve. Serve this salad with grilled chicken or fish.

Notes

  • Red cabbage and black chickpea salad can be served in room temperature or cold.
  • Garlic is totally optional but if you want to include raw garlic in your diet then this can be the delicious and healthy way to go.
