Warm cauliflower salad

Sometimes simple things can give you a great result and this salad is proof. Warm cauliflower salad is a hearty salad with steamed cauliflower, avocado, black chickpeas / lentils with caper and ginger dressing. This salad is pretty simple and very healthy. You can see there is no oil in the dressing because I think avocado does a great job providing enough fat and creaminess. The ginger, capers, chilies and mustard provide great flavor and are spicy and sour at the same time. The dressing needs to sit for at least 20-30 minutes so that ginger can get soft and the strong raw flavor can lighten a bit.

Chickpeas or black lentils are optional, I just added because it was there in my refrigerator, plus it adds a little protein to the salad. You can add what ever beans you have in your hand. But black chickpeas (kala chana in Hindi) adds amazing texture to this salad.

Warm cauliflower salad is a combination of steamed cauliflower florets and black chickpeas or black lentils combined with tangy and spicy dressing containing capers, ginger, mustard, chilly and cilantro.

Ingredients

  • 1 medium cauliflower cut into small florets

  • 1 avocado diced

  • 1/2 cup of cooked black chickpeas or black lentils or black beans

  • Dressing :-
  • 1-2 small green chillies finely chopped (to taste)

  • 2 Tbsp of cilantro or parsley finely chopped

  • 1-2 Tbsp of lemon juice

  • 2 tsp of capers, crushed

  • 1 tsp of whole grain mustard

  • 10-12 ginger julienned strips (very thinly sliced ginger strips)

  • Salt to taste

Directions

  • In a big bowl, mix green chillies, ginger, capers, mustard, lemon juice and cilantro and let it sit for 30 minutes so that the ginger gets softened.
  • Steam the cauliflower with salt until it is just done but still crunchy.
  • Add cubed avocado, chickpeas or lentils and steamed cauliflower into the dressing and mix well.
  • Warm cauliflower salad is done and ready to serve.
