Aloo Bhaji / Potato Bhaji

A very simple and easy potato side dish which almost every people loves and why not as it requires a very common and few basic ingredients which is available in every Indian kitchen. Aloo bhaji or potato bhaji is a boiled potatoes sauteed with onion and few seasonings. This beautiful yellow colored potato sabji is made very often in many Indian kitchen as a breakfast and served with puris.

Aloo bhaji is a very easy recipe made with boiled potatoes and some flavorful Indian seasonings.

Ingredients

  • 3 medium potatoes

  • 1 medium onion, sliced

  • 2 green chillies

  • 1/2 tsp of turmeric powder

  • 1/2 tsp of mustard seeds

  • 1/4 tsp of fennel seeds

  • 1/4 tsp of cumin seeds

  • 1 Tbsp of cilantro, chopped

  • Salt to taste

  • 2 tsp of oil

Directions

  • Boil the potatoes, until tender. When it is cool enough to handle, peel off the skin and cut it into bite size pieces.
  • In a pan, heat oil and splutter mustard, then add cumin and fennel seeds. After 30 seconds, add onion, chillies and let it cook until translucent.
  • Now add tumeric and salt. Saute for 30 seconds.
  • Then add potatoes and toss it well. Let it cook again for 3-5 minutes over low-medium heat.
  • Lastly add cilantro and aloo bhaji is done.
