Potatoes and tomatoes are one of the most loved vegetables around the world. In this recipe, boiled potatoes are cooked in thick, tangy and spicy tomato gravy.

Ingredients

  • 4 medium potatoes, boiled

  • 4 medium tomatoes

  • 4 green chilies, slit length wise

  • 1 big onion, finely chopped

  • 5 garlic cloves, finely chopped

  • 1/2 tsp of turmeric powder

  • 3/4 tsp of fennel powder

  • 1 tsp of coriander powder

  • 2 tsp of paprika or Kashmiri chilly powder

  • 2 Tbsp of cilantro, chopped

  • 1 tsp of each mustard and cumin seeds

  • Salt to taste

  • 1 Tbsp of oil

Directions

  • In a pan, boil 3-4 cups of water. Put tomatoes in a boiling water and boil for 2-3 mins or until the skin of tomatoes started to tear up.
  • Take out the tomatoes and let it cool down a little, then peel off the skin and grind them in a food processor.
  • Heat oil in another pan and splutter mustard seeds, then add cumin and fennel seeds. Stir for 10 sec and add onion, green chillies and salt and mix.
  • When onion is translucent, add garlic and stir for 1 -2 min. Now add all the dry masala/spices and again mix for a minute.
  • Now add pureed tomatoes into the mixture and let it cook for 6-8 minutes, till the masala leaves oil.
  • Now chop half of the potatoes in small cubes and mash rest of it. Add this to the tomato mixture along with 1/4 cup of water and cook for another 2 minutes.
  • Check for the salt, then garnish it with cilantro. Serve aloo tamatar sabji with hot chapati or paratha .
