Besan Bhindi is a delicious recipe in which bhindi or Okra and onions roasted to crispy perfection with little chickpea flour and flavored with fennel, coriander and mango powder.

Ingredients

  • 1 pound of bhindi (okra)

  • 4 Tbsp of besan (gram flour)

  • 1 Tbsp of coriander powder

  • cayenne pepper to taste

  • 1 tsp of fennel powder

  • 1/4 tsp of turmeric powder

  • 1 tsp of mango powder

  • 1 medium onion diced

  • 3-4 Tbsp of oil

Directions

  • Trim the ends and cut the bhindi in quarters. Now toss the bhindi with coriander powder,turmeric, mango powder, cayenne pepper,fennel powder and salt and set aside.
  • Now in a wide pan, heat half of the oil and add sliced onion, stir for a minute, then add besan and again stir for about 2-3 minutes.
  • Now add all the bhindi mixture with remaining oil and mix. Let it cook uncovered at medium heat, stirring occasionally.
  • After 5-6 minutes, put on the lid and let it cook again, till the bhindi is brown and lightly crispy .
  • Besan bhindi is done. Serve it with Plain or stuffed paratha or rice and dal.
