Shallow fried bhindi/okra stuffed with a spicy mixture of peanuts, sesame and few Indian spices. This mouth watering side dish can make any simple meal a special one.

Ingredients

  • 250 gm of bhindi / okra / ladyfinger

  • 2 Tbsp of roasted and coarse peanut powder

  • 1 Tbsp of sesame seeds

  • 1 tsp of red chilly powder

  • 2 tsp of mango powder

  • 1/2 tsp of turmeric powder

  • 1/2 Tbsp of coriander powder

  • 1 tsp of cumin powder

  • 1 Tbsp of dry coconut flakes

  • salt to taste

  • 1-2 Tbsp of oil

Directions

  • Wash the okra and pat dry it completely with kitchen towel. Slit the okra vertically, so that you can stuff the mixture inside it.
  • In a bowl mix well peanut, sesame, coconut and all the spices written above. Stuff the okra with this mixture one by one.
  • Heat oil in a wide pan, then place the stuffed okra one by one. Now put on the lid and cook over low heat until one side is done.
  • Now flip the okra and again cook till it is fully done. If there is any left over stuffing then sprinkle it over the okra five minutes before the okras are done.
  • Serve Bharwa Bhindi / Stuffed Okra Recipe warm with rotis or rice and dal.
