Bhindi Do Pyaza / Okra with Onions

Bhindi do pyaza is one of the very popular okra dishes in any Indian restaurant. People have different theories for its name ” do pyaza ” . Some say it is because we add double the amount of onions in this dish and others say, because onions are added in two different stages. Any which way, bhindi do pyaza is super delicious and a special side dish for any bhindi and onion lover. Bhindi means okra in Hindi language and dopyaza or dopiaza is a Persian word for two onions.

Bhindi do Pyaza is a yummy okra dish made with ton of sliced onions. It goes really well with Roti or Indian flatbread.

Ingredients

  • 250 g of bhindi or okra, washed

  • 2 large red onions, sliced

  • 1 tsp of red chilly powder or to taste

  • 1/2 tsp of turmeric powder

  • 3/4 tsp of coriander powder

  • 1/4 tsp of cumin powder

  • 1/2 tsp of amchur powder or dry mango powder

  • 1/4 tsp of hing / asafoetida

  • 1/2 tsp of cumin

  • Salt to taste

  • 1.5 Tbsp of oil

Directions

  • Wash the bhindi or okra and wipe it dry completely. Then cut the bhindi into 2 inch pieces.
  • Heat oil in a wide pan and add cumin seeds. When it sizzles, add hing and  bhindi ( okra ) and mix well.
  • Put on the lid and let the bhindi cook for 8-10 minutes over low heat, stirring in between.
  • Now add the onions, salt and mix well. Cook for another 6-8 minutes or until the bhindi is almost done, without the lid .
  • Then add coriander, red chilly, turmeric, cumin and mango powder. Mix well and let it cook for another 2-4 minutes.
  • Bhindi do pyaza is done.

Notes

  • Serve bhindi do pyaza with roti or paratha and dal.
  • Try to use wide pan for making bhindi do pyaza, as it will make bhindi easy to cook.
  • Bhindi or okra is widely used and very popular in India. There are so many different ways to cook okra. Okra is popularly used in making curry, raita, sambar and kadhis. Because okra tends to get slimy while cutting and cooking many people gets a hard time to use it. Cooking okra with any acidic agent like tomatoes, lemon or vinegar decreases its sliminess.
