Kadai Paneer Recipe

minutesKadai paneer is one of the most popular Indian dish. Paneer(Indian cheese)cooked in tomato gravy with freshly roasted, ground coriander seeds and dry red chilly.
Ingredients
1 cup of cubed paneer (about 8 oz or 1/2 lb)
1 medium finely chopped onion
2 large finely diced tomatoes
1 big green bell pepper diced
3 whole red chilly and few green chilies to taste(Use less if you want less spicy)
1&1/4 Tbsp of whole coriander seeds and 1/2 Tbsp of crushed coriander seeds
1/2 tsp of turmeric powder
1 tsp of paprika
1 Tbsp of ginger chopped and few julienned
5-6 garlic cloves
1 tsp of kasuri methi
4 Tbsp of chopped cilantro leaves
Directions
- Soak Paneer in a 4 cups of salted hot water for 20 minutes. Then take paneer out from the water and set it aside for later use.
- Dry roast red chilly and coriander seeds till it gives nice aroma.
- Once it gets cooled down, coarsely grind it together.
- Heat pan with oil and add crushed coriander and chopped ginger. Stir for few seconds then add chopped onion .
- When onion gets translucent, add crushed garlic and green chilly, stir for few minutes and add all ground spices.
- Now add chopped tomatoes, salt and mix it through and let it cook for few minutes.
- When the tomatoes are all cooked and mushy add green bell pepper and let it cook for about 2 minutes. We want pepper still little crunchy.
- Now add in soaked paneer, kasuri methi and 1/2 cup of water and mix well.After 3-4 minute,add in julienned ginger and mix.
- Cook till paneer soaks the moisture and gravy is almost but not completely dry.
- Add in cilantro and mix well. Kadai paneer is done. Serve warm with roti or parathas.
