Mexican Black Beans Recipe

hoursBlack beans are packed with protein and fiber. This Mexican dish combines black bean with onion and lots of garlic and spiced up with cumin and chilly powder .
Ingredients
1 cup of dry black beans, soaked for at least 8 hours or overnight
1 medium onions finely chopped
4-5 big garlic cloves minced
1 tsp of cumin powder
1 tsp red chili powder
Fresh lime juice
2 Tbsp of chopped cilantro
salt to taste
2 tsp of oil
1 cup of cooking liquid of beans or chicken or vegetable stock
Directions
- Cook black beans in enough water with salt until it is fully cooked. Save its cooking liquid.
- Heat oil in a pan, saute onions with salt until onions are translucent.
- Now add garlic and saute for 1-2 minutes and then add cumin and chilly powder and stir again for 1 min.
- Now add black beans and mash half of the beans with the back of your spoon or use potato masher, then add stock and cook further for about 3-4 minutes.
- Lastly, toss in the cilantro and lime juice and mix well.
Notes
- Serve Mexican black beans as a side dish with fajitas or Mexican rice or use in burritos. It also goes well with hot chapati or rice too.
- If you do not have enough time to soak beans, then use 2 15 oz cans of black beans.
