Palak Nutrela / Spinach Soy bean

Nutrela is a soya bean chunk or granules which are very popular and prominent protein in India. Palak Nutrela or spinach soy is a vegan or vegetarian entree in which Nutrela is cooked in tomato and spinach gravy. Cashew paste makes this dish even more creamy and luscious. Palak Nutrela is a delicious and healthy recipe which is best if you want to include spinach in your diet. This curry tastes awesome with roti or paratha. This protein rich curry comes in handy especially when you want to follow vegetarian diet for a week and you are tired of eating dal or lentil. Palak Nutrela is a healthy recipe made with soy chunks and pureed spinach.

Ingredients

  • 1 medium bunch of spinach

  • 1 cup of nutrela or soya chunks/granules

  • 1 big onions, finely chopped

  • 3 medium tomatoes

  • 6 garlic, finely chopped

  • 1 inch ginger, finely chopped

  • 2-3 green chillies, finely chopped

  • 1/2  tsp of mustard and cumin seeds

  • 1.5 tsp of coriander powder

  • 1.5 tsp garam masala

  • 1/3  cup of cashew soaked in water or 1/2 cup of cream

  • 1-2 Tbsp of oil

  • Handful of cilantro, chopped

  • Salt and pepper to taste

Directions

  • Steam the spinach or just microwave it for 2-3 minutes until it is wilted. When the spinach cools down, grind it with soaked cashews and 1 Tbsp of water into a smooth paste.
  • Boil nutrela / soy bean chunks in 3 cups of water with salt for 10 minutes. When it is cool to handle, squeeze the water out of nutrela/soya and keep it aside. 
  • Heat oil in a pan, splutter mustard seeds and then add cumin. When cumin sizzles add ginger, onion and mix it well.
  • After 6-8 minutes, when the onion is translucent, add garlic, tomatoes and salt. Cook until the tomatoes are mushy and the mixture starts to release oil.
  • Add nutrela / soya chunk with 1/4 cup of water and mix well. Put on the lid and let it cook for 10 minutes over low heat, stirring in between.
  • Now add in the spinach mixture and cook again for another 8-10 minutes over low heat.
  • Lastly add in the cilantro and switch off the heat. Palak nutrela or spinach soy bean is ready to serve.

Notes

  • You can serve palak nutrela with chapati or naan
  • You can add cream instead cashews paste .
  • Add just a tablespoon of butter to make palak nutrela curry even more rich and creamy.
