Plantain bhurji is a recipe in which boiled and mashed plantain is tempered with mustard seeds, curry leaves and urad dal. Plantains are high in fiber, potassium and vitamins A and C.

Ingredients

  • 2 plantain boiled and mashed

  • 1 tsp of mustard seeds

  • 2 tsp of urad dal

  • 1/4 tsp of turmeric powder

  • 1/2 tsp of chilly powder

  • 1 tsp of chopped garlic

  • 1 tsp of ginger

  • Few curry leaves

  • Salt to taste

  • 1-2 Tbsp of oil

Directions

  • Heat oil in a pan and pop mustard seeds ,then add urad dal, ginger, garlic, curry leaves and stir for few seconds.
  • Then add all the dry masalas and stir again for few seconds.
  • Now add mashed plantain with salt and mix. Cook until it get warm through. Plantain bhurji is done. Serve with hot rice and kadhi or with roti.
