Plantain Stir Fry / Vazhakka Mezhukupuratti Recipe

minutesVazhakka Mezhukupuratti is a side dish from Kerala in which diced plantains are perfectly roasted to golden brown in a pan with turmeric and red chilly powder. Plantain gets sweet and crispy, when it cooks down and with addition of little spice it gets balance well.
Ingredients
2 medium plantain, peeled and very finely diced
1/2 tsp of turmeric powder
1/2 tsp of red chilly powder
Salt to taste
1 Tbsp of oil
Directions
- Heat oil in a wide pan, then add plantain, salt and saute on medium-high for about 10 minutes .
- When the plantain are almost done, add turmeric and red chilly powder and saute again until it is nice and crispy.
- Serve Plantain Stir Fry / Vazhakka Mezhukupuratti with rice and dal or sambhar.
