Vazhakka Mezhukupuratti is a side dish from Kerala in which diced plantains are perfectly roasted to golden brown in a pan with turmeric and red chilly powder. Plantain gets sweet and crispy, when it cooks down and with addition of little spice it gets balance well.

Ingredients

  • 2 medium plantain, peeled and very finely diced

  • 1/2 tsp of turmeric powder

  • 1/2 tsp of red chilly powder

  • Salt to taste

  • 1 Tbsp of oil

Directions

  • Heat oil in a wide pan, then add plantain, salt and saute on medium-high for about 10 minutes .
  • When the plantain are almost done, add turmeric and red chilly powder and saute again until it is nice and crispy.
  • Serve Plantain Stir Fry / Vazhakka Mezhukupuratti with rice and dal or sambhar.
