Yet another simple and nutritious dish. Spinach with Chickpea recipe combines chickpeas and spinach together, fully flavored with mustard seeds and lemon zest.

Ingredients

  • 1 cup of baby spinach

  • 1.5 cup of cooked chickpeas / 15 oz of chickpea can

  • 1 tsp of grated lime rind (rind of one lime)

  • 3-4 garlic cloves

  • 1 medium sliced onion

  • 1 tsp of mustard seeds

  • 1 tsp of olive oil

  • Red chilly to taste

  • 1/2 tsp of black pepper powder

  • Salt to taste

Directions

  • Heat pan with oil and add mustard seeds ,when it starts to pop, add onions, garlic, salt and let it cook .
  • When onions are translucent, add chickpeas, red chilly powder and stir for minutes.
  • Now add spinach and stir. When it is wilted (it will take 1-2 min), turn off the flame and add lime zest, black pepper and mix.
  • Chickpeas with spinach is done. Serve warm with roti or parathas or rice.
