Spinach with Chickpea Recipe

minutesYet another simple and nutritious dish. Spinach with Chickpea recipe combines chickpeas and spinach together, fully flavored with mustard seeds and lemon zest.
Ingredients
1 cup of baby spinach
1.5 cup of cooked chickpeas / 15 oz of chickpea can
1 tsp of grated lime rind (rind of one lime)
3-4 garlic cloves
1 medium sliced onion
1 tsp of mustard seeds
1 tsp of olive oil
Red chilly to taste
1/2 tsp of black pepper powder
Salt to taste
Directions
- Heat pan with oil and add mustard seeds ,when it starts to pop, add onions, garlic, salt and let it cook .
- When onions are translucent, add chickpeas, red chilly powder and stir for minutes.
- Now add spinach and stir. When it is wilted (it will take 1-2 min), turn off the flame and add lime zest, black pepper and mix.
- Chickpeas with spinach is done. Serve warm with roti or parathas or rice.
