Zucchini peanut masala is a curry made from cubed zucchini in creamy peanut butter with little jaggery, tamarind and few Indian spices. This dish is creamy, tangy and sweet at the same time.

Ingredients

  • 1 pound of zucchini, diced

  • 1 medium onion, chopped

  • 1 tsp of ginger, finely chopped

  • 1 tsp of garlic, finely chopped

  • 1 tsp of coriander powder

  • 1/4 tsp of turmeric

  • Cayenne pepper to taste

  • 1-1.5 tsp of tamarind concentrate

  • 1 tsp of jaggery or sugar

  • 2 Tbsp of peanut butter

  • 1 tsp of mustard seeds

  • 1/2 tsp of fennel seeds

  • 2-3 tsp of oil

  • Salt to taste

  • 1-2 cups of water

  • Few leaves of cilantro chopped

  • Toasted peanuts for garnishing

Directions

  • Heat oil in a pan, splutter mustard and fennel seeds,then add ginger, onion, garlic and salt, saute until onion turns golden brown.
  • Now add all the dry spices and mix well. Add in the tamarind and jaggery and cook it for about 5 minutes .
  • Add peanut butter and water and let it comes to a boil .
  • When the gravy starts to boil, add in the zucchini,cover and cook until zucchini is tender and gravy is thickened.
  • Garnish it with cilantro and roasted peanuts. Serve warm with roti or parathas.
