You want to talk about the street food of India, you start with the chaat. It is this spicy, savory, tangy combination of rich flavors and textures. People in India  just love this food.

Chaat can be made with so many different combinations and ingredients and the taste can be tempered to one’s liking. This one here is an aloo tikki chaat. The Aloo tikki chaat is a chaat classic where potato patties are topped with spicy peas gravy, onions, cilantro, tamarind chutney, green chutney and sev.

Aloo tikki chaat is a super popular Indian street food made with potatoes patties topped with white peas curry and chutneys.

Ingredients

  • For Potatoes Patties :-
  • 3-4 large potato, boiled

  • 1 Tbsp of cornflour

  • 3-4 green chilies finely chopped

  • 2 Tbsp of cilantro chopped

  • 1 tsp of roasted cumin powder

  • Salt to taste

  • 3 Tbsp of oil

  • For Vatana Gravy :-
  • 1 cup of dry whole white vatana or white peas

  • 1 medium onion chopped

  • 1 tsp of chopped ginger

  • 1 tsp of chopped garlic

  • 1/4 tsp of turmeric powder

  • Red chilly powder to taste

  • 2 tsp of garam masala

  • 2-3 tsp of chaat masala

  • 1 cup of water

  • Salt to taste

  • 1 tbsp of oil

  • Serve with :-
  • 1/4 cup of yogurt

  • 1/2 cup of tamarind chutney or imli chutney

  • 1/4 cup of mint coriander chutney / Green chutney

  • 1/2 cup of chopped onion

  • 1/2 cup of chopped tomatoes

  • 1/2 cup of sev

Directions

  • Method for Vatana Gravy or white peas curry :-
  • Soak vatana or peas for about 6-8 hours, then cook it in a pressure cooker with 4 cups of water to 3 whistles over medium heat, then switch off the heat.
  • Let the pressure goes down by itself, then open the cooker carefully and check the peas,it should be soft and little mushy.
  • For gravy, heat oil in pan then add onion, ginger and garlic and fry till mixture is light brown.
  • Now add all the dry masalas and stir for about a minute and add cooked peas.
  • Add a cup of water and when it comes to boil, simmer for 5 minutes. Add more water if required.
  • Method for Aloo Tikki :-
  • For patties, mash the potatoes with cornflour, cilantro, chillies, cumin powder and salt together and make 8 equal size balls and press it down to form a patty.
  • Heat oil in a wide pan and shallow fry the patties till it becomes golden brown on both sides.
  • Assembling Aloo Tikki Chaat :-
  • For one serving, take 2 patties in a serving plate, pour 2 laddle full of vatana gravy and top it with a tbsp of yogurt, 2 Tbsp of tamarind and 1 tbsp of green chutney chutney, little sev, little onion and few tomato.

Notes

  • Aloo tikki chaat is ready to serve . You can add or deduct any topping as per your liking.
    You can also use chickpeas instead of white peas or vatana.
